Ingredients:
1 pound pasta (your choice)
2 tablespoons olive oil
2 cloves garlic, minced
1 red bell pepper, sliced
1 zucchini, sliced
1 cup cherry tomatoes, halved
1 cup baby spinach
1 cup vegetable broth
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Instructions:
Cook the pasta according to package instructions and drain.
In a large pot, heat the olive oil over medium heat. Add garlic and sauté until fragrant.

Ingredients:
1 pound ground beef or turkey
1 packet taco seasoning
1 cup canned corn, drained
1 cup canned black beans, drained and rinsed
1 bell pepper, chopped
1 cup shredded cheddar cheese
8 small tortillas
Aluminum foil
Toppings: sour cream, salsa, avocado, cilantro
Instructions:
Preheat campfire or grill to medium heat.
In a skillet, cook the ground beef or turkey over medium heat until browned. Add taco seasoning and cook according to package instructions.
Lay out large pieces of aluminum foil. In the center of each, place a scoop of cooked meat, corn, black beans, and bell pepper.
Fold the foil packets to seal the ingredients inside.
Place packets on the grill or campfire grate and cook for about 10-15 minutes, until heated through.
Carefully open the packets, sprinkle cheese on top, and let it melt.

4 boneless, skinless chicken breasts, cut into chunks
1/4 cup olive oil
2 lemons, juiced
2 cloves garlic, minced
2 tablespoons fresh rosemary, chopped
2 tablespoons fresh thyme, chopped
Salt and pepper to taste
Wooden or metal skewers
Instructions:
In a bowl, whisk together olive oil, lemon juice, garlic, rosemary, thyme, salt, and pepper.
Add chicken chunks to the marinade and let sit for at least 30 minutes (or up to 2 hours for more flavor).
Preheat grill to medium-high heat.
Thread the marinated chicken onto skewers.

This dessert is a camping classic and a perfect sweet treat to end the day.
Ingredients:
2 cans peach slices in syrup
1 box yellow cake mix
1/2 cup butter, sliced
1 teaspoon cinnamon
Instructions:
Preheat campfire or charcoal grill for baking.
In a Dutch oven, pour in the peach slices with their syrup.
Sprinkle the dry cake mix evenly over the peaches.
Distribute butter slices evenly over the top of the cake mix.
Sprinkle with cinnamon.
Cover the Dutch oven and place it over hot coals. Put additional coals on the lid to ensure even cooking.
Bake for 30-45 minutes, or until the top is golden brown and the filling is bubbly.
Serve warm, possibly with a scoop of vanilla ice cream.
